Sapwood Cellars
Columbia, MD · since 2018
Sapwood Cellars opened in October 2018 in a business park on Route 108 in Columbia. Co-founders Scott Janish and Michael Tonsmeire both came from homebrewing and brewing science writing: Scott wrote The New IPA and Michael writes The Mad Fermentationist blog and wrote American Sour Beers. The name covers both halves of the brewery, Sap for fresh hoppy beers and Wood for barrel-aged sour and mixed fermentation beers. Albura Taqueria runs the kitchen, Tuesday is trivia night and new cans come out on weekend release days.
