Sloop started in a Poughkeepsie garage in 2011 and moved production to Elizaville in 2014. Its taproom and restaurant, The Factory, is in a former IBM plant in East Fishkill, with about 20 rotating taps and a kitchen that serves burgers, pizza and global street food. The taproom is open Wednesday through Sunday.
